Here's what to do: Tell your boss of your intent verbally then afterwards with a letter of resignation. If you're leaving for better opportunities elsewhere, be straightforward about your reason for going and tell him about what you have learned while you were on the job. Of course you can distort the truth a little, especially if you've had enough of the boss who never seemed to get your name right after three years of service. But it helps to accentuate the positive. Don't be tempted to tell your boss off, express your true feelings, or just pick up your things and leave.
Remember it's a small world. Any unprofessional behavior, even if you know you're on the way out, could possibly bite you in the ass years from now. Besides, you never know when you need to grovel back to your boss asking for your old job back.
